    Yeah, it was a terrible couple of days - my poor Indy... Well, because the pup is so young, we won't be picking her up in PA until the June 17th - Soph Indy's sister, is still here and she's a bit mopey without Indy as well... I think Sophie will like the new pup (I sure hope she does <g>).

    had the BBS sidelined.

    That breeder did not work out at all for us, sad to say. I asked the breeder to hold the pup for an extra week for us because of Ron's back issues starting back up rather suddenly ... It would have been H___ making that drive to Pennsylvania from Ithaca ... She said, "OK, but I'm going to have to charge you an addional 75 bucks a day for every day the pup is here." I said, "You know what? Keep my deposit, we don't need the aggravation right now!" So, deposit of 200 bux down the tube so to speak, but I couldn't see Ron making that drive given the pain he was in... I'm looking at some local shepherds currently, we'll see how that goes. I'm in no rush...

    This is an icing I made this week for my favorite non-gluten Chocolate Cake... it's absoutely fantastic... Ron loved it so much, he also heaped the frosting on top of his ice cream the next day :)

    ====Easy Fluffy Marshmellow Frosting====
    Ingredients:

    4 large egg whites
    1 cup granulated sugar
    1/4 teaspoon cream of tartar
    1/4 teaspoon salt
    1 teaspoon vanilla

    Instructions

    Add the egg whites, granulated sugar, cream of tarter, and salt to a heat-safe bowl of an stand mixer. Set the bowl over a saucepan filled with a few inches of simmering water.
    If you aren't using a stand mixer, use any large heat-safe bowl, with
    high sides for mixing.
    Heat the mixture, whisking constantly until the egg whites are warm to
    the touch and sugar has dissolved, about 3 - 4 minutes.
    Remove the bowl from the heat and transfer to your stand mixer fitted
    with the whisk attachment. Mix on high speed, until stiff, glossy peaks form, about 7-9 minutes. Add the vanilla during the last 10 seconds of mixing.
    Spread or pipe onto cake immediately.

    WOW! 75$ a DAY? Good call. I know you do pedigree Labs but have you thought of a Lab/Other mix at the local shelters such as you have? Anyways, Sheps are good and fairly close in nature to Labs, other than a bit of herding instincts.

    For a recipe, not in MM (on the wrong machine) but this one is simple and fun.

    Summer Squash Casserole
    8-10 servings

    6-7 EA Sliced summer squash (1/4-1/2 inch thick)
    1/4-1/2 C chopped onion
    1 C shredded carrot
    1 EA Cream of mushroom soup can
    1 C sour cream
    4 C Herbed seasoned stuffing mix (crumbs, not cubes)
    1/2 C melted butter

    Bring a pot of slightly salted water to boil then add sliced squash and onion. 5 minutes (do not wait for it to come to a boil again before timing that or will be too soft). Drain well.
    In a mixing bowl, add cream soup, sour cream and carrot and blend.
    Put 1/2 the stuffing made up with the melted butter in a casserole, then mix the veggies with the cream soup, carrots and sour cream and fill the center. Top with the rest of the stuffing mix.

    Bake at 350F for 25-30 minutes.

    We did get two beautiful pedigree black Labs when we lived in Kentucky, they were two of the most beautiful dogs we ever had.. and absolutely great with kids (the grandboys were pretty young then, so it was important :)) and like true labs, they ate everything in sight.. no chair, table leg or piece of furniture was safe around them but they were SO lovable!!

    We are looking at the local shelter as well as at locally available full breed dogs.. we'll see how it works out ...

    ===Opera Fudge===
    About 1 pound of fudge

    2 cups granulated sugar
    1 cup heavy cream
    scarce pinch of salt
    1/8 teaspoon salt
    2 tablespoons butter
    1/2 teaspoon vanilla extract
    4 Hershey chocolate bars

    Put sugar, cream and pinch of salt into a saucepan. Cook and stir over moderate heat. When at the boiling point, add 1/8 teaspoon salt. Using a candy thermometer, cook to the soft ball stage (234F).

    Remove from heat; add, without stirring in, the butter. Let stand until almost cold. Beat until the fudge is no longer glossy and is thick and creamy. Cover with a damp cloth and let stand 1/2 hour.

    Sprinkle vanilla extract over the fudge. Work it into the fudge with your hands. Press the fudge into a shallow pan lined with wax paper. When firm, cut in squares.
