If you need another telnet spot, shenks.dyndns.org or shenks.synchro.net and I am on port 24.

    Noted for the next time.

perch filets ... a potato flake crusted pan fry

I usually use fine dried bread crumbs or seasoned flour and bake or
saute rather than a wet batter and deep fry but that sounds good.
I'll have to go buy some instant potato flakes and try it.

then a softer milks based bread, toasted for a different
samwich with some of my new cropping baby lettuce

    Or coleslaw instead of lettuce?

Roslind grew a wee batch of butter leaf lettuce in a window box
early this spring and we had a single absolutely wonderful salad
made with fresh baby herbs as a result. It appears as if the danger
of frost is finally over and she moved all our starter plants
    outdoors this weekend.

    Here's another fish sandwich idea:

Oh I like the shift you have there! I tend to coleslaw as separate from the sandwich but I have often used cabbage in place of lettuce for things. Most commonly in wraps.

Here's a unique ersatz 'Tartar Sauce' replacement that may work for you. It's for when you have no relish or pickles.

    1/2 c Mayo
    2 ts Ms Dash, original

Mix and let settle but can be used right away. Expand serving as desired.

    Absolutely!

BTW, the Ms Dash and mayo version above seems to be a better match than tradional pickle tartar sauce for fried Catfish and fried Trout.

To me, a sweet pickle relish is just 'wrong somehow' with fish.
