Title: Jerome's Blackened Catfish

MMMMM-------------------------SPICE MIX------------------------------
1 Part cayenne pepper
1 Part chilli spice mix
1 Part paprika
1 Part garlic powder
1/2 Part thyme powder
ds Bay leaf powder
ds Salt
MMMMM----------------------------FISH---------------------------------
2 tb Butter
4 (1/2" thick) catfish fillets
1 Lemon juice and zest
Thyme sprigs; garnish

Dip fresh 1/2" thick catfish filets into the spice
mixture, coating well. Add about 2 tablespoons of butter
into a red-hot skillet.
Once butter totally coats the pan, immediately place
spiced fish in pan for 3 minutes per side, adding a
little butter when flipping.
Salt fish to taste while in the pan. When fish is
blackened and finished, wipe out pan and repeat cooking
instructions for the next batch.
Squeeze lemon over and serve immediately, garnished with
lemon zest, extra lemon wedges, and fresh sprigs of
thyme. Serve with cornbread, collard greens, and potato
salad ... and don't forget the sweet tea!
