July 4: National Caesar Salad Day

Title: Finian's Chicken Caesar Salad
Categories: Poultry, Seafood, Cheese, Greens
Yield: 4 Servings
2 c Cooked chicken strips
2 Anchovy filets; fine
- chopped
1/2 c Mayonnaise
1 tb Grated Parmesan cheese
1 tb Red wine vinegar
1 ts Worcestershire sauce
1 ts Dijon mustard
1 cl Garlic; minced
1/2 lg Bunch romaine lettuce; torn
1 sm Red onion; in rings
1 Carrot; julienned
In a large bowl, combine the first eight ingredients.
Just before serving, stir in lettuce, onion and carrot;
toss to coat.
Yield: 4 servings.
