A rough rule of thumb for sweet and sour meat treatments is to use
equal volumes of vinegar or lemon juice to sugar so consider
reducing the sugar to 2 tb but not eliminating it altogether. To be
safe, start with just 1 tb and taste test before adding the second
one.
I've never added HP to Coney sauce, but why not.

Yield: 1 batch
1 lb Ground beef
2 ts Worcestershire sauce
19 oz Can tomatoes
2 ts HP (steak) Sauce
19 oz Can water
1/2 ts Chili powder
1/2 ts Paprika
3 Cloves finely minced garlic
1/2 ts Cayenne pepper
1 ts Salt
1/2 ts Pepper
Brown ground beef. Add and mix remaining ingredients. Bring to boil
and simmer one hour. Lastly add 3/4 cup finely ground bread crumbs
and 1/2 c white vinegar. Enjoy on hot dogs.
