    MEATLOAF: Meatloaf is one of America's favorite comfort foods, and for
    good reason! It's hearty, comforting and is served at many diners
    throughout the country. Even better, it's budget-friendly and easy to
    make at home. Here's a tasty diner-style recipe that tops off the loaf
    with a tangy homemade BBQ sauce.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Copycat Diner Meatloaf
    Categories: Beef, Vegetables, Pork, Mushrooms, Herbs
    Yield: 8 servings

    MMMMM------------------------BBQ SAUCE-------------------------------
    1 tb Worcestershire sauce
    1 1/2 c Ketchup
    1/4 ts Garlic powder
    2 1/4 ts Molasses
    6 tb Brown sugar
    1 ts Cider vinegar
    3/4 ts Salt
    1/4 ta Ground black pepper
    pn Cayenne pepper
    6 tb Water
    2 tb Honey
    1 tb Orange juice

    MMMMM-------------------------MEATLOAF-------------------------------
    2 c Shiitake mushrooms
    2 tb Diced white onion
    1 tb Olive oil
    1 lb Ground beef
    4 oz Ground veal
    10 oz Ground pork
    1 lg Egg
    3/4 c Bread crumbs
    1 1/2 ts Cchopped fresh parsley
    1/2 ts Chopped fresh thyme
    1/2 ts Chopped fresh sage
    2 1/4 ts Minced garlic
    2 1/4 ts Heavy cream
    3/4 ts Worcestershire sauce
    1 ts (ea) salt & black pepper

    TO MAKE THE BARBECUE SAUCE: Combine all ingredients in a
    small saucepan. Simmer for 20 minutes. Allow the sauce
    to cool.

    TO MAKE MEATLOAF: Set oven @ 350ºF/175ºC.

    In a large skillet, saute mushrooms and onion in oil
    until tender. Remove from heat.

    In a large bowl, combine meats, egg, bread crumbs,
    herbs, garlic and cream. Mix well. Add mushroom and
    onion mixture. Add 2 tablespoons of the prepared
    barbecue sauce, Worcestershire sauce, salt and pepper.
    Mix well.

    Press meat mixture firmly into loaf pan. Cover it with
    foil and bake 60 to 75 minutes.

    Remove the foil and drain any grease in the bottom of
    the loaf pan with a baster.

    Coat with the loaf with barbecue sauce. Bake uncovered
    for 10 to 15 minutes.

    Cut the meatloaf into slices and serve with the
    barbecue sauce.

    Servings: 8

    WESTERN/DENVER OMELET: Western omelets are the perfect breakfast,
    brunch or even late-night diner meal, thanks to the filling egg
    protein and savory ingredients like ham, bell peppers and onions.
    This easy recipe shows you how to make one omelet for the whole family
    by baking it in the oven.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Baked Western Omelet (or Denver Omelet)
    Categories: Dairy, Pork, Vegetables, Cheese
    Yield: 5 servings

    8 lg Eggs
    1 c Whole milk or cream
    1/2 ts Seasoned salt
    6 oz Diced cooked ham
    1/2 c Shredded Cheddar cheese
    1/2 c Fine chopped onion
    1/2 c Fine chopped bell pepper
    1/2 c Fine chopped red bell
    - pepper
    Chopped fresh chives-garnish

    Whisk together eggs, milk, and seasoned salt in a large
    bowl. Stir in ham, cheese, onion, and bell peppers.

    Pour egg mixture into a greased 8" square baking dish.

    Bake @ 350ºF/175ºC for 45 minutes - 1 hour, or until
    eggs are cooked and omelet is set.

    Cut into squares and garnish with chives.

    Yields 4 very large slices, or 6 moderate sized slices.

    Cooking for a larger group? Double the ingredients and
    bake the omelet in a 9" x 13" pan. You may need to
    extend the baking time by 5-10 minutes.
