stuck with / caramel ice cream sauce used to make
atrocious coffee mixtures in the style of Starbucks, marshmallow
Fluff and Nutella. I have figured out how to doctor them up so that
they make tolerable ice cream sundae sauces.
The caramel sauce got lemon juice to counter it's overly sweet
nature, plus apricot nectar and dark rum to give it some character.
And was thereby much improved.
I'd have just mixed it with Hershey's syrup
I make my own chocolate syrup. It's cheaper and dead simple: equal
parts cocoa, water and white sugar brought to a boil while stirring
constantly. As it cools off you can consider adding vanilla or
mint extract or any of the brown liquors: whisky, rum or brandy for
additional flavour.
I scream sundaes are supposed to be decadent and tooth-achingly
sweet.
Decadent and sweet yes. Tooth-achingly sweet? Not so much.
Sprinkle on some chopped nuts for a nod toward balancing the sweet.
I had two kinds of nuts plus granola and coconut to choose from.
No maraschino cherries and whupped cream?
Never nasty maraschinos. Loads of fresh cherries in season.
Also other fruit. Bananas go very nicely with walnuts and maple
syrup.
I bought whipped cream for Roslind's pumpkin pies and I will
certainly use some once the Fluff is used up.

Title: Celestial Peach Sundae

Yield: 4 Servings
4 Scoops vanilla ice cream
8 Peach halves, fresh
Candied ginger,chopped/opt
GINGER-WALNUT SAUCE:
1 c Light corn syrup
1/4 c Brown sugar, packed
3 tb Butter or margarine
1 c Coarsely chopped walnuts
1/4 c Chopped candied ginger
4 tb Southern Comfort liqueur
Place the ice cream in 4 sundae dishes and place in the freezer.
Combine all the sauce ingredients (except the peach liqueur) in a
saucepan and bring to a boil. Cook rapidly for about 3 minutes.
Top ice cream with 2 peach halves and spoon Ginger-Walnut Sauce
over each sundae. Spoon on 1 Tbls. of Southern Comfort over peach
halves and sprinkle with a little chopped candied ginger, if
desired.
