Title: ZUNI VEGETABLE STEW
Categories: Mexican
The Zuni are indigenous Americans who actually live in eastern
Arizona and western New Mexico, originally from the Zuni river
valley (part of the Colorado River system). They are Pueblo people,
a group of independent tribes who had irrigated agriculture and
villages composed of multi-storey apartment buildings in common,
long ago but the Zuni have their own language.
1 c Yellow Squash; Thinly Sliced
17 oz Whole Kernel Corn; Drained
16 oz Pinto Beans; Drained, 1 can
The combination of squashes, corn and beans is a common one among
all kinds of tribes all over who took to agriculture over hunting and gathering. They are often referred to as The Three Sisters, as they
are grown together and support each other as well as being cooked
and eaten together. They are a staple with many peoples the way
bread, rice or potatoes are elsewhere.
My last big soup here was a combination of pumpkin, corn and black
beans, along with tomatoes, onions, garlic, chilies and Chinese leaf
celery. Half the batch got cumin and chili powder and half received
a curry powder mixture. There is still a pint left.
Cheers
