End of season fall fruits are so attractive and inexpensive that it
easy to overpurchase. We were looking at a glut of perishable fruit:
apples, plums and grapes, so this is what we did today ...

I made a plum sauce. I pitted and chopped all the leftover black and
purple prune plums. I boiled them about 8 minutes with 1/4 cup of
sugar, 1/2 cup of water, 1 tsp of lemon juice and a dash or two
each of cinnamon, nutmeg, ginger, cloves and allspice. The resulting
chunky sauce is good with pork, and also on pancakes and ice cream.

Roslind took to baking and made a massive apple coffee cake, loaded
with a mixture of Gala, Granny Smith and Honeycrisp chopped apples
topped with oatmeal, walnut and cinnamon streusel crumbs.

A couple of days ago I had started making a batch of Greek yogurt
which was ready this morning, so a portion of it became a fruit
    salad dressing.

I make yogurt with 1 cup of water, 1 cup of milk powder, 1 cup of
milk and 1 cup of light cream. It all gets mixed together in a Pyrex
bowl, microwaved for 1 minute until just warm, not hot, about 95-105
    F. (Using the milk powder with just a single cup of water results in
a thicker than usual yogurt and the cream brings the butterfat
content up to 7-8%. There's no need to drain the whey from this
yogurt; it's thick and creamy right from the get go.)

The next step is to place the Pyrex bowl in a large soup pot partly
filled with warm water, stirring in a half cup of yogurt from the
previous batch, putting the lid in and placing it in the oven with
the light left on. About every hour or two, if I think of it, I heat
the oven for just one minute. It's usually ready in 36-48 hours. The
cost is about a quarter of the brand name yogurt at the supermarket
that I originally used as a starter culture.

My salad dressing is pretty basic: yogurt, honey and vanilla.

Today's fruit salad was made with chopped Honeycrisp apples and
green and red seedless grapes sliced in half. It was nice as a
    topping on the coffee cake!

    Cheers

    Jim
