Title: Roasted Chicken Thighs w/Peanut Butter Barbecue Sauce

2 tb Oil
1/4 c Minced onion
2 tb Tomato paste
1/2 c Natural smooth peanut
- butter
1/4 c Soy sauce
1/4 c Distilled white vinegar
2 tb Turbinado or lt brown sugar
2 tb Unsulphured molasses
2 ts Worcestershire sauce
1 1/2 ts Kosher salt
1 ts Black pepper
1/2 ts Smoked paprika
1/2 ts Cayenne

2 lb Boned, skinned chicken
- thighs
2 tb Oil
3/4 c Barbecue sauce

MAKE THE BARBECUE SAUCE: In a medium saucepan, heat oil.
Add onion and cook over moderate medium heat, stirring
occasionally, until softened, about 2 minutes. Add
tomato paste and cook, stirring, until lightly
caramelized and deepened in color, about 2 minutes.
Whisk in the remaining ingredients and 6 tablespoons
water. Simmer until flavors are combined, and the sauce
is slightly thickened, about 5 minutes.
MAKE THE CHICKEN: Set oven @ 425ºF/218ºC. Set a rack
over a rimmed baking sheet.
In a large bowl, combine chicken, oil and 1/4 cup of the
barbecue sauce and season with salt. Toss to evenly coat
and arrange on the rack. Roast, using a brush to baste
with the remaining 1/2 cup sauce every 10 minutes, until
the chicken is cooked through and deep golden in color,
about 30 minutes. Serve with the leftover sauce on the
side, or store sauce in the refrigerator for later use.

Title: PBJ (Peanut Butter, Bacon, Jam)

Yield: 1 Sandwich
2 sl Aldi Multi Grain Sandwich
- Thins
3 tb Crunchy peanut butter
+=OR=+
3 tb Nutella
3 sl Smoked bacon; cooked crisp
1 tb Mick's Peppourri pepper jam
Spread the peanut butter on the bottom round of the
sandwich thin. Place the bacon, breaking to fit on
the sandwich, on the peanut butter. Coat the top of
the sandwich with the pepper jelly and set on the
bacon. Pick it up and PIG OUT.
