    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: McDonald's French Fries - Copycat
    Categories: Potatoes
    Yield: 3 Servings

    MMMMM---------------------------BRINE--------------------------------
    8 c Cold water
    1/2 c Corn syrup
    3 tb Salt
    1 ts White vinegar

    MMMMM---------------------------FRIES--------------------------------
    6 lg Russet potatoes; 4.5 lb
    1 qt Oil
    1/2 c Vegetable shortening
    Salt

    Combine the brine ingredients and set aside.

    Peel and rinse that potatoes.

    Slice them into strings just under 1/2". (A french fry
    potato cutter makes this easy.)

    Place them in the cold brine as you slice them. Ensure
    the potatoes are completely submerged. Add more cold
    water if needed.

    Cover and place the brine in the fridge for 2 hours or
    overnight.

    Drain and rinse them twice with cold water. Pat them
    completely dry.

    Heat oil to 300ºF/150ºC. A dutch oven and oil
    thermometer is very helpful.

    Fry the potatoes in batches for about 5 minutes. Remove
    with a slotted spoon and place on a paper towels. They
    will be very soft. (This is a good thing.)

    Add the vegetable shortening and increase the heat to
    400ºF/205ºC. Fry in batches again until golden brown.
    (It’s hard to be patient during this part.)

    Remove and place on paper towels. Season with salt
    right away and serve!

    A decent sized portion is 4 oz. so that should read 18 servings.

    Title: Rhubarb Ketchup
    Categories: Condiments, Canning, Fruit
    Yield: 3 1/2 pints

    6 c Diced fresh rhubarb
    4 c Chopped onions
    1 1/2 c Diced celery
    28 oz Can of tomatoes;
    -drained and mashed
    3 c Sugar
    2 c White vinegar
    2 ts Ground cinnamon
    1 ts Ground cloves
    1 ts Salt
    1 ts Pepper
    Mixed pickling spices

    The mixed pickling spices should be tied in a double layer of
    cheesecloth. Measure all ingredients into large saucepan. Bring to
    a boil over medium heat. Simmer, uncovered about 35 minutes,
    stirring often until vegetables are cooked and mixture thickens.
    Remove spice bag and throw away. Put through sieve to remove seeds
    and make smooth. Reheat to boiling. Pour into hot, sterilized pint
    jars to within 1/2 inch of top. Place sterilized metal lids on
    jars and screw metal bands on. Process in boiling water bath for
    ten minutes.

    Title: McDonald's Filet-O-Fish
    Categories: Five, Sandwiches, Seafood, Sauces, Cheese
    Yield: 1 Serving

    1 Van de Camps frozen breaded
    - whitefish patty *
    1 sm Regular hamburger bun
    1 tb Prepared tartar sauce
    1/2 sl Real American cheese
    ds Salt

    * use any square whitefish patty not extra crisp, like
    Mrs. Paul's, or even the store brand.

    Pre-heat your deep fryer to 375ºF/190ºC. After it's
    ready, cook fish 3-5 minutes until done. (do NOT thaw
    first.)

    Remove and add a dash of salt.

    Microwave the bun about 10 seconds, until hot and
    steamy. (Do NOT toast the bun) Add about 1 Tb of
    prepared tartar sauce to crown side of the bun. Place
    the cooked fish filet on top, add 1/2 slice American
    cheese centered on the fish, and add heel of the bun.
    Wrap in a 12"x12" sheet of waxed paper and warm in
    oven's lowest setting for 8-10 minutes.
