• Turkey Day in Five - 4

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Roasted Green Beans w/Pancetta & Lemon Zest
    Categories: Five, Beans, Pork, Citrus
    Yield: 9 servings

    2 1/2 lb Green beans; trimmed
    4 oz Pkg diced pancetta
    4 tb Olive oil
    3/4 ts Salt; more to taste
    1 ts Black pepper
    Zest & juice of 1 lemon

    Set the oven @ 400ºF/205ºC and position the oven racks
    in the lower and top thirds of the oven.

    Divide the green beans and pancetta evenly between two
    sheet pans. Drizzle each sheet pan with 2 tablespoons
    olive oil, and sprinkle each with 3/8 teaspoon salt and
    1/2 teaspoon pepper. Toss well, and roast for 10
    minutes. Toss, switch racks, and roast for 5 to 10 more
    minutes, until cooked to your liking.

    Sprinkle with the lemon juice. Season with salt to
    taste, toss, and transfer to a serving platter. Garnish
    with the lemon zest and serve hot or warm.

    So high temperature?

    That's the temperature called for. It's not unusual. Some dishes of
    that sort ask for 350ºF/175ºC. Others go with the higher setting.

    Here's one I do which uses oven heat halfway between 350ºF/175ºC and 400ºF/205ºC.

    Title: Dirty Dave's Hash Browns Casserole
    Categories: Potatoes, Vegetables, Cheese, Eggs, Pork
    Yield: 8 Servings

    2 lb Frozen hash brown potatoes;
    - shredded or diced
    1 Onion; chopped
    1 Bell pepper; chopped
    1 Red bell pepper; chopped
    2 c Thick cut bacon; in 1/4"
    - square pieces
    10 lg Eggs; beaten well
    Salt & pepper
    1 1/2 c Cheddar cheese; shredded

    Cook the bacon to your desired crispness. Remove with
    a slotted spoon and set aside, leaving the rendered
    pork fat in the skillet.

    Add hash browns, onion, and bell peppers.

    Cook until potatoes begin to brown.

    Spray 9" x 13" baking dish with non-stick spray.

    Spread potato mixture in pan.

    Top with cooked bacon.

    Pour beaten eggs over all and season to taste with
    salt and pepper.

    Gently stir to coat all ingredients with eggs.

    Sprinkle with cheese.

    Refrigerate overnight.

    Bake uncovered @ 375ºF/190ºC for 35 minutes.
