    My mother used to make a dish she called ambrosia using fresh grated coconut and orange sections (cut to remove all membrane and seeds).
    It was very good.

    My mom made a similar version: oranges and pineapple macerated
    in their own juices, with sliced bananas stirred in just before
    serving. Some times she sprinkled coconut on it too.

    I make it like hers but add just a little liqueur to the mix for
    added taste, usually Cointreau or something similar in the Triple Sec
    family. A splash of dark rum is nice too.

    There are some horrible atrocities out there with ingredients like
    miniature marshmallow and fake whipped cream. One of my sisters-in-
    law makes a batch every Thanksgiving and Christmas. It would make a
    barely tolerable dessert but she serves it as a side salad to the
    turkey, mashed potatoes and gravy. My nephew used to love it when he
    was a little kid and she is under the erroneous impression that he
    still does. But these days he is a strapping six foot four, beer
    swilling construction worker with two kids, a step son, an ex-wife
    and a current girlfriend and his tastes are very different. Still,
    when urged sufficiently, he will eat a tiny portion with his turkey.

    cheese in it:

    Yield: 25 servings

    2 x 9 oz containers of Cool Whip
    -"whipped product"
    16 oz Sour cream
    14 oz Bag miniature marshmallows
    (plain or multicoloured)
    2 x 10 oz cans Mandarin oranges
    -drained
    19 oz Can Pineapple tidbits
    -drained
    14 oz Bag of coconut

    Mix cool Whip and sour cream. Add oranges and pineapple. Mix in
    the coconut well. Last add marshmallows.
