    December 21 - National Hamburger Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Barbecue Hamburger Patties
    Categories: Bbq, Beef, Citrus
    Yield: 6 Servings

    1 1/2 lb Ground beef
    1 ts Salt
    1/2 c Chilli sauce
    1 tb Lemon juice
    1/2 c Onion; chopped
    1/3 c Catsup
    2 tb Brown sugar

    Mix the meat, onion, and salt together. Shape the mixture
    into 6 patties, each about 3/4" thick. Brown the patties
    in a large skillet over medium-high heat, turning once.

    Cover and cook over low heat about 10 minutes. Drain off
    the excess fat. Mix catsup, chilli sauce, brown sugar,
    and lemon juice. Pour sauce over the patties. Cover and
    simmer for 15 minutes, spooning the sauce onto the
    patties occasionally.

    Serve with the sauce spooned over the patties.

    Now it's way too sweet.

    Fixing the sweetness that way just makes it weird.

    I wonder where they scraped that from. It pops up on dozens of
    similar websites that crawl the internet but nobody ever quotes a
    source.

    Barrie Lax once made Pljeskavica for me. He made three patties, one
    each of veal, lamb and pork. Each one was very oniony. He pressed
    them together to form a thick salisbury steak like patty and
    grilled it. The veal was in the centre and remained rare while the
    pork and lamb layers were well done and dripping fat. It was very
    good.

    Title: Yugoslavian Pljeskavica
    Categories: Yugoslavian, Groundmeat, Veal, Pork, Lamb
    Yield: 3 Servings

    1 lb Ground meat- lamb, pork,
    Veal, beef or mixed
    3 tb Finely chopped onion or
    Scallions
    1 tb Minced parsley
    1 tb Paprika
    1 Clove minced garlic
    Salt to taste
    Generous amount of black
    Pepper

    It's called pljeskavica and pronounced something like pleshkavitsa.
    It is similar to cevapcici but it is made in a patty form. Here's a
    basic recipe:

    Mix all together thoroughly and let sit for an hour or two. Form into
    3 patties and grill over wood coals or charcoal until they are no
    longer pink in the middle. They are often served with chopped onions.

    Even if you caramelised the "sauce" it wouldn't help. Not something I'd
    ever make. But, hey, they can't all be gems.

    That looks pretty decent. Sort of a meatloaf burger. Put it on a seeded
    bun with a slice of yellow cheese, a slice of raw onion, a slice of
    tomato and a bit of mayonnaise ...... yuuuummmmmmeeeee.

    Here's one of my favourite burgers - inspired by the 1972 7up advertising campaign - and topped as above:

    Title: Dirty Dave's Unburger
    Categories: Five, Beef, Cheese, Sandwiches
    Yield: 1 Sandwich

    1/2 lb Ground chuck
    1 sl Round Colby or Longhorn
    - cheese 3/16" thick
    Salt & pepper
    1 6" seeded bun; toasted

    Hand form two burger patties from the chuck. Place the
    cheese on top of a patty and cover with second patty.
    Crimp edges together to form one nice sized hamburger
    patty.

    Cook on/in very hot griddle/skillet for 90 seconds on
    first side, flip and cook on other side until melted
    cheese begins to ooze from the meat. Season with salt
    and pepper.

    Place on toasted bun and top with whatever condiments
    you desire.
