1/4 ts Fresh ground black pepper
The very essence of what Peppernuts or German Pfeffernusse are is
the addition of pepper to the spice mix. Preferably white pepper.
Only 2 of your 5 recipes have any pepper in them at all.
Roslind made a couple hundred Danish Pebernodder last Sunday which
are the same thing. She got the recipe from her first husband's
Danish mother and grandmother. It calls for equal amounts of ginger,
cinnamon, cardamom. and white pepper.

Title: Chocolate Tapioca Pudding

Yield: 8 Servings
1 c Sugar
3 tb Tapioca
1/8 ts Salt
3 2/3 c Milk
1 Egg
2 oz Unsweetened Chocolate
2 ts Instant Coffee
1 ts Vanilla
Combine sugar, tapioca and salt in saucepan; stir in milk and beaten
egg. Let stand 5 minutes. Add chocolate and instant coffee. Cook and
stir over medium heat until mixture comes to a full boil and
chocolate is well blended, about 15 minutes. Remove from heat and
stir in vanilla. Cool for 20 minutes, stir. Chill.
Makes about 8 servings.
