    Title: Creamed Apple Tapioca
    Categories: Desserts, Fruit, Pudding
    Yield: 10 Servings

    2 tb Minute tapioca
    3 c Milk
    2 Eggs, beaten
    1/2 c Sugar
    Salt
    6 md Apples, coarsely chopped
    1/2 c Sugar
    Nutmeg

    Cook the tapioca in the milk until transparent, add the eggs,
    sugar and salt. Remove from fire at once. Put the apples in a
    baking dish and sprinkle with the sugar and nutmeg. Pour the
    tapioca over the apples and bake until the apples are soft.

    It's not cold enough here to move things to the balcony. As soon as we get
    a deep cold for a while we will be moving everything outside in coolers and boxes so we can defrost the big freezer.

    Currently 1c outside and expected high of 7 today.

    Canada app and switched from Yellowknife to Oshawa out of curiosity.

    As soon as we get a deep cold for a while we will be moving
    everything outside in coolers and boxes so we can defrost the big
    freezer.

    And you do get deep cold once in a while. May be not as often as I
    did in Ottawa but still it's not rare.

    Title: Peppermint Tapioca Parfaits for Two
    Categories: Desserts, Pudding, Chocolate
    Yield: 2 Servings

    1 1/2 tb Quick-Cooking Tapioca
    1 1/2 tb Sugar
    1 c Milk
    1 ds Salt
    1 Egg Yolk
    1 Egg White
    1/2 ts Vanilla
    Red Food Coloring
    3 tb Peppermint Candy; Crushed
    1/3 c Chocolate Cookies Crumbs

    In a pan, mix 1 1/2 tablespoon each, quick-cooking tapioca and
    sugar, 1 cup milk, dash of salt, and 1 egg yolk; let stand for 5
    minutes. Beat 1 egg white until very foamy; then gradually
    sprinkle in 1 tablespoon sugar, beating until soft peaks form; set
    aside

    Cook tapioca mixture over medium heat, stirring constantly, until
    it comes to a full boil (about 6 to 8 minutes). Remove from heat
    and gently fold in beaten egg white just until blended. Stir in
    1/2 teaspoon vanilla and a few drops of red food coloring, if
    desired. Let cool, uncovered, for 30 minutes. Fold in 3
    tablespoons crushed peppermint candy, cover and chill.
    Meanwhile. crush enough chocolate cookies to make 1/3 cup.

    To serve, place about 1 tablespoon crumbs in each of two parfait
    glasses (at least 1-cup size). Top with several spoonfuls tapioca
    mixture; repeat layers, ending with a sprinkle of crumbs. Cover
    and chill if made ahead.

    It's fine in one sense, but I'd love to get that darn freezer de
    frosted.

    Not rare at all. We'll hit -30 at some point for at least a week or
    two.
