CHIMICHANGA: A chimichanga is simply a deep-fried burrito. A specialty
of the American Southwest (and a favorite of the Marvel Comics character Deadpool), it was apparently invented in Arizona, perhaps when a cook accidentally dropped a burrito into a pot of hot fat. The owners of El
Charro Cafe in Tucson, the city's oldest Mexican restaurant, claim it
was invented there in 1922. A claim has also been made by Phoenix
restaurateur Woody Johnson, who maintained that he invented the
chimichanga, though not till 1946.

Title: Chimichangas (Deep-Fried Burritos)

Yield: 6 Servings
1 lb Beef, chicken or pork;
- browned & drained *
1 md Onion; chopped
1/2 c Red chile or enchilada sauce
12 Flour tortillas
Oil for frying
2 c Cheddar cheese
2 c Shredded lettuce
2 c Chopped green onions
* chopped, diced, shredded or ground; your choice
In a large skillet, brown meat and drain. Add onion and
chile or enchilada sauce. Spoon about 3 TB meat filling
in center of each tortilla. Fold tortilla, tucking in
ends, and fasten with wooden toothpicks.
Only assemble 2 or 3 at a time as tortilla will absorb
liquid from sauce. If using a large frying pan, use 1"
of oil over medium heat, fry folded tortilla, turning
until golden about 1 to 2 minutes. If deep frying heat
oil to 350+|F before cooking (two at a time). Drain on
paper towels and keep warm.
Garnish with cheese, lettuce, and onion.
Yield: 12 Chimichangas or fried burritos
