    CUBAN SANDWICH: Mixed meat sandwiches, or mixtos, were common workers'
    fare in 19th- and early 20th-century Cuba. Though it is often associated
    with Miami these days, today's Cuban sandwich -- roast pork, ham, Swiss
    cheese, and pickles on mustard-slathered lengths of baguette-like Cuban
    bread -- was first concocted by immigrant cigar makers in Key West,
    Florida, in the late 19th century and later refined in Tampa. In Tampa,
    which has a sizeable population of Italian origin, salami is typically
    added to the mix.

    Title: Grilled Cuban Sandwich

    Yield: 4 Servings

    8 sl Pork loin; 1 oz each
    8 sl Ham; 1 oz each
    12 Dill pickle chips
    8 sl Emmental cheese
    4 Sandwich rolls
    Dijon mustard

    Prepare a wood or charcoal fire and allow it to burn to
    embers. Layer each sandwich with the cheese, ham , pork,
    and pickles.

    Grill the sandwich, top side down for 1 minute, turn over
    and place a saute pan on top and continue to cook until
    cheese is melted about 3 to 4 minutes.

    Yield: 4 servings
