Title: Sophia's Malay Chicken Curry

Yield: 5 Servings
1/4 c (60 ml) olive oil
2 md Onions; sliced
2 cl Garlic; crushed
2 tb (30 ml) medium-strength
- curry powder
1 (thumb-size) piece fresh
- ginger; grated
3 Quills of cinnamon
2 Bay leaves
2 md Tomatoes; skinned, chopped
8 Chicken portions
1/4 c (60 ml) water
Salt & pepper
100 g Soft dried apricots
125 g Dried prunes
Fine chopped parsley;
- garnish
Heat the olive oil in a saucepan and fry the onions
until they start to brown. Add the garlic and fry (do
not let the garlic brown). Add the curry powder, ginger,
cinnamon and bay leaves and fry. Add the chopped
tomatoes and fry lightly. Add the chicken portions and
then the water. Cover and cook slowly for about 30
minutes. Add the salt, pepper and dried fruit. Cover
again and cook slowly for 1 hour.
Serve on a bed of basmati rice and sprinkle with finely
chopped parsley.
