There are many variations of cream cheese and cucumber sandwiches.
Basically, it's a slice of bread topped with cream cheese and slices of cucumber. The sandwich, which has originated in Great Britain during the Victorian Era, is meant as an appetizer.

Title: Cucumber Cream Cheese Tea Sandwiches
Categories: Five, Breads, Cheese, Squash, Vegetables
Yield: 18 servings

1 Loaf white bread
1/2 c Cream cheese
1 English cucumber; thin
- sliced
Lemon juice
Salt & pepper
Chopped fresh chives; opt

Gather the ingredients.

Lay 2 slices of bread flat and spread each evenly with
cream cheese.

Cover 1 side of the sandwich with sliced cucumber.

Season with a squeeze of lemon juice, salt and pepper,
and chives (if using).

Cover the cucumbers with the other slice of bread, cream
cheese side down.

Cut off the crusts and slice the sandwich diagonally 2
times to create 4 triangular finger sandwiches. Repeat
with the remaining bread, cream cheese, and cucumber.

Serve and enjoy.

Yields: 36 finger sandwiches
