    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Colin Ambrose's Mexican Sweet Corn Chowder
    Categories: Vegetables, Chilies, Herbs, Soups, Dairy
    Yield: 12 Servings

    20 Corn cobs; niblets removed
    - and reserved
    2 ga Water
    1 lb Unsalted butter
    1 qt Half & half
    1 lg White onion; chopped
    3 bn Cilantro; stems included,
    - rinsed twice
    20 Poblano chilies; halved,
    - seeds & stems intact
    2 tb Sea salt

    Simmer cobs for 45 minutes uncovered; stirring
    occasionally.

    Remove from heat. Remove corn cobs.

    Blend all remaining ingredients at medium speed in
    Vita-mix until smooth. Place in large shallow pans
    (2-6" deep hotel pans), add the raw corn kernels
    and then chill.

    TO SERVE: Bring soup to a simmer. Fry corn tortillas cut
    into strips. Garnish with queso fresco or feta cheese
    and a sprig of cilantro.

    Categories: Five, Beverages, Booze, Citrus, Squash
    Yield: 1 Shooter

    3/4 oz Campari
    2 oz Espol+|n Blanco
    3/4 oz Fresh lemon juice
    1/4 oz Simple syrup
    4 sl Cucumber; 3 muddled 1 for
    - garnish

    Shake the cocktail and then strain it into a chilled
    cocktail coupe. Garnish with a cucumber on the side and
    serve immediately.
