Title: Eric's Pickled Red Onions

Yield: 3 Servings
1 Red onion
1/2 c Apple cider vinegar
1 tb Local Honey
1 1/2 ts Kosher salt
1 ts Vanilla sugar
Slice the onion very thin and set aside.
Mix salt, sugar, honey and vinegar until solids
dissolve.
Add onions into liquids and toss to combine.
Cover with plastic and press down onto surface of onions
so they are all submersed in the vinegar mixture.
Rest 1 hour at room temp.
Move to airtight and refrigerate.
