Title: Greek Chicken Kabobs

Yield: 4 Servings
Cooking spray
2 ts Fine shredded lemon peel
3 tb Lemon juice
3 tb Snipped fresh oregano
2 tb Olive oil
2 cl Garlic; minced
3/4 ts Salt
1/4 ts Ground black pepper
1 1/2 lb Chicken; cut lengthwise in
1 " strips
1 c Grape tomatoes
6 oz Carton plain low-fat yogurt
1/2 c Shredded cucumber
2 ts Lemon juice
4 Greek pita flatbreads
Preheat broiler. Line a 15" x 10" x 1" baking pan with
foil. Lightly coat foil with cooking spray; set pan aside.
In a medium bowl whisk together lemon peel, the 3
tablespoons lemon juice, the oregano, oil, garlic, 1/2
teaspoon of the salt, and the pepper. Add chicken; toss to
coat. Thread chicken and tomatoes onto six to eight long
metal skewers. Place skewers in the prepared baking pan;
drizzle with any remaining lemon mixture.
Broil 4" to 5" from the heat for 12 to 14 minutes or until
chicken is done, turning once halfway through broiling.
Meanwhile, in a small bowl combine yogurt, cucumber, the 2
teaspoons lemon juice, and the remaining 1/4 teaspoon
salt.
Remove chicken and tomatoes from skewers. To serve, spread
yogurt mixture on flatbreads. Top with chicken and
tomatoes.
