Title: Cranberry-Apple Pork Roast

14 oz Can whole-berry cranberry
- sauce
1 1/2 ts Grated orange zest
1/4 c Orange juice
1/3 c Shallots
1 tb Cider vinegar
1 (1") section of fresh
- ginger; peeled, grated
1 ts Dijon mustard
2 lb Bonelesss pork loin roast;
- trimmed, patted dry
Salt & pepper
2 Tart apples; peeled, cored,
- in 1" pieces
1 tb Cornstarch

3 tb Hot water
Stir together the first seven ingredients in the slow
cooker.
Season the pork roast all over with salt and pepper and
place it in the slow cooker. Spoon some of the sauce over
the roast.
Cover and cook on low for 6 to 8 hours, or until the pork
is fork-tender. Add the apples during the last hour of
cooking.
Place the pork on a carving board, tent it with foil, and
let it stand for 10 minutes before slicing. While the pork
rests, stir the cornstarch mixture into the sauce and cook
until thickened, about 10 minutes.
Serve the pork slices with a spoonful of sauce and apples
on top. Offer the remaining sauce on the side.
FOR EASY CLEANUP: Line your slow cooker with a disposable
slow cooker liner. Add ingredients as directed in recipe.
Once your dish is finished cooking, spoon the food out of
your slow cooker and simply dispose of the liner. Do not
lift or transport the disposable liner with food inside.
