2 tb Red wine vinegar
2 tb Olive oil
1 tb Honey
1/4 ts (ea) salt & ground black
- pepper
1 Head escarole; cored, thin
- sliced
1 c Shredded carrots
1 c Thin bias-sliced celery
4 oz Prosciutto or salami;
- chopped
1/2 c Hazelnuts; toasted, chopped
In an extra-large bowl whisk together vinegar, oil, honey,
salt, and pepper. Add escarole, carrots, celery,
prosciutto, and hazelnuts; toss to coat.
