    Title: Roasted Green Bean Bundles
    Categories: Five, Vegetables, Herbs, Pork, Appetisers
    Yield: 10 Servings

    30 Fresh green beans; trimmed
    1 tb Oil
    1/4 ts Smoked salt
    - +=OR=+
    1/8 ts Seasoned salt
    1/4 ts Ground black pepper
    10 Thin slices capocolla
    - +=OR=+
    5 Thin slices prosciutto;
    - halved crosswise
    - Lemon wedges (opt)

    Set oven @ 425ºF/218ºC.

    In a large saucepan, cook green beans, covered, in a small
    amount of boiling lightly salted water for 5 minutes;
    drain. Let stand about 10 minutes or until cool enough to
    handle.

    Arrange green beans in a single layer in a 13" x 9" x 2"
    baking pan. Drizzle beans with cooking oil and sprinkle
    with smoked salt (crush if necessary) and black pepper;
    toss to coat. Wrap bundles of three green beans in
    capocolla slice. Place, seam side down, in the baking pan;
    secure with wooden toothpicks, if necessary.

    Bake, uncovered, about 10 minutes or until beans are
    crisp-tender and capocolla is crisp. Remove toothpicks, if
    using. If desired, squeeze lemon wedges over bundles.
