    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Cobb Salad Sub

    Yield: 6 Servings

    3 tb Olive oil
    1 tb White wine vinegar
    1 ts Dijon-style mustard
    1/2 ts Fresh ground black pepper
    1/4 ts Salt
    2 c Diced cooked chicken or
    - turkey
    1 Avocado; halved, seeded,
    - peeled, chopped
    2/3 c Chopped roma tomatoes
    4 sl Bacon; crisp-cooked, drained
    - crumbled
    1 lb Loaf French bread
    2 c Chopped butterhead lettuce
    - leaves
    1/4 c Crumbled blue cheese
    2 lg Hard-cooked eggs, chopped

    For dressing, in a small bowl whisk together oil, vinegar,
    mustard, pepper, and salt.

    In a medium bowl combine chicken, avocado, tomatoes, and
    bacon. Pour dressing over chicken mixture; toss to coat.

    Cut a wedge in the top of the bread about 1 inch from
    edges. Use your hands to pull out some of the inside of
    the loaf, leaving about a 3/4" shell. Layer in lettuce,
    chicken mixture, cheese, and eggs. Let stand 15 minutes
    before slicing carefully with a long serrated knife. Or,
    wrap and chill up to 2 hours.

    Makes: 6 servings
