    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Felix's Tangy Salmon Sheet Pan Dinner
    Categories: Seafood, Vegetables, Potatoes, Herbs, Citrus
    Yield: 4 Servings

    2 c Small potatoes; halved
    4 oz Asparagus; trimmed
    1 c Cherry tomatoes
    2 tb Chopped thyme
    4 Salmon filets
    Olive oil
    Salt & pepper
    1 ts Fresh lime juice

    MMMMM---------------------------SAUCE--------------------------------
    1/4 c Felix lingonberry jam
    1 tb Soy sauce
    1 tb Fresh lime juice
    pn Cayenne pepper; or more

    Set oven @ 400ºF/205ºC.

    Grease a sheet pan.

    Place potatoes in a sheet pan, add 2 tablespoons of olive
    oil, 1 teaspoon thyme, salt, and pepper. Toss to coat.

    Bake for 10 minutes.

    Remove from oven and move potatoes over to one side.

    Place salmon filets in the middle, skin side down.
    Sprinkle olive oil, salt, pepper and lime juice on top.

    Toss the tomatoes and asparagus with olive oil, salt,
    pepper, and thyme. Place around the salmon.

    Bake for 15-17 minutes.

    Meanwhile, prepare the sauce by placing all the
    ingredients in a bowl and mixing with a fork.

    Remove sheet pan from the oven and spoon sauce all over
    the salmon.

    Broil for 2-3 minutes or until the sauce is bubbly.

    Remove from oven and enjoy!
