Title: Carrot Soup

1 tb Olive oil
1 1/2 lb Peeled, sliced carrots
Salt & pepper
1 cl Garlic; minced
1/2 ts Snipped fresh thyme
2 c Vegetable broth
Plain Greek yogurt; to swirl

In a medium saucepan, heat olive oil over medium heat. Add
carrots, cook for 5 to 7 minutes or until lightly browned.
Season with salt and pepper. Add garlic, and snipped
thyme. Cook 1 minute more. Stir in vegetable broth. Bring
to a boil. Reduce heat; simmer, covered, for about 25
minutes or until carrots are softened. Cool. Transfer soup
to blender and blend until smooth.
Serve with plain Greek yogurt to swirl in.
