4 c Torn iceberg lettuce
2 c Torn romaine
1 1/2 c Chopped, seeded cucumbers
3 Plum tomatoes; seeded and
- chopped
1/2 lb Fresh mozzarella; cubed
2/3 c Chopped red onion
7 1/2 oz Jar marinated, quartered
- artichoke hearts; drained
1/2 c Canned garbanzo beans;
- rinsed, drained
2 1/4 oz Can sliced ripe olives;
- drained
1/3 c Greek olives; drained
1/3 c Sliced pimiento-stuffed
- olives; drained
4 sl (thin) hard salami;
- julienned
4 sl (thin) prosciutto;
- julienned
1/2 c Crumbled feta cheese
1/3 c Grated Parmesan cheese
MMMMM--------------------------DRESSING-------------------------------
1/2 c Olive oil
1/4 c Lemon juice
1 Anchovy fillet; fine
- chopped
1 tb Garlic powder
1 tb Dried oregano
1 tb Minced fresh cilantro
Pepper
In a large salad bowl, combine the first 13 ingredients.
Sprinkle with feta and Parmesan cheeses. In a jar with a
tight-fitting lid, combine dressing ingredients; shake
well. Drizzle over salad; toss to coat.
