Title: Evelyn's Chicken Scalopini

Yield: 7 Servings
2 lb Chicken; in 2" strips
Eggs
Bread crumbs
Parmesan cheese
Oil
14 oz Can chicken broth
1 tb Flour
10 3/4 oz Cream of mushroom soup
8 oz (2 cans) mushrooms w/juice
1/2 Soup can white wine
Cut chicken in 2" strips. Dip in egg and bread crumbs
with parmesan cheese added. Fry in oil until golden. Put
cooked chicken into baking dish.
Add chicken broth to frying pan and add flour. Stir. Add
Cream of Mushroom soup, mushrooms with juice and white
wine. Stir until smooth. Pour mixture over chicken.
Cover and bake in 350ºF/175ºC oven for 30 to 45 minutes.
