Title: Chipotle Pork Chilli

8 oz Boneless pork or beef
- sirloin
Cooking spray
1 ts Olive oil
1 c Chopped onion
2 cl Garlic; minced
14 1/2 oz Can diced tomatoes;
- undrained
8 oz Can tomato sauce
1 c Water
1 Chipotle in adobo; chopped
1 ts Dried basil; crushed
1 ts Dried oregano; crushed
1 ts Chilli spice mix
1/4 ts Ground cumin
1 1/2 c Whole kernel corn
Trim fat from meat. Cut meat into thin bite-size strips.
Lightly coat a large saucepan with cooking spray. Heat
over medium-high heat. Add meat. Cook and stir for 2 to 3
minutes or until meat is brown. Remove meat from saucepan
and set aside.
Carefully add the oil to the hot saucepan. Cook onion and
garlic in the hot oil about 4 minutes or until onion is
tender. Stir in undrained tomatoes, tomato sauce, water,
chipotle pepper, basil, oregano, chili powder, and cumin.
Bring to boiling; reduce heat. Simmer, covered, for 15
minutes, stirring occasionally.
Stir in frozen corn. Simmer, covered, for 5 minutes more,
stirring occasionally. Stir in meat. Heat through.
Makes: 3 servings
