    Title: Mini Turkey Meat Loaves w/Fiery Tunisian Sauce

    Yield: 4 Servings

    Cooking spray
    1 lg Egg; lightly beaten
    2/3 c Almond meal
    1/2 c Fine chopped green onions
    4 cl Garlic; minced
    1/2 ts Sea salt
    1/2 ts Caraway seeds; crushed
    1/4 ts Fresh ground black pepper
    12 oz Lean ground turkey
    8 oz Ground pork

    MMMMM--------------------FIERY TUNISIAN SAUCE-------------------------
    1 md Red bell pepper; stemmed,
    - seeded, halved lengthwise
    3/4 c Grape or cherry tomatoes
    2 Pitted whole unsweetened
    - dates
    1/4 c Boiling water
    1 tb Olive oil
    1 tb Tomato paste
    1 cl Garlic; minced
    1/4 ts Sea salt
    1/4 ts Ground coriander
    1/4 ts Cayenne pepper
    1/8 ts Ground cumin
    1/8 ts Ground allspice

    Set oven @ 450ºF/232ºC.

    Line a baking sheet with foil. Place pepper halves, skin
    sides up, and tomatoes on foil. Bake 15 to 20 minutes or
    until pepper skins are evenly charred. Remove from oven;
    set tomatoes aside. Wrap foil up around pepper halves to
    fully enclose. Let stand until cool enough to handle.

    Meanwhile, in a bowl combine dates and boiling water.
    Cover; let stand 10 minutes. When peppers are cool enough
    to handle, use a small, sharp knife to peel off skin.

    In a food processor or blender combine undrained dates,
    sweet pepper, tomatoes, oil, tomato paste, garlic, salt,
    coriander, cayenne pepper, cumin, and allspice. Cover and
    process or blend until smooth, scraping sides of container
    as needed.

    MAKE THE MEATLOAVES: Set oven @ 350ºF/175ºC.

    Coat twelve 2 1/2" muffin cups with cooking spray.

    In a large bowl combine the next seven ingredients
    (through pepper). Add ground turkey and pork; mix well.
    Lightly press mixture into prepared muffin cups.

    Bake 30 minutes. Spoon 2 teaspoons of the Fiery Tunisian
    Sauce over each loaf. Bake 10 minutes more or until turkey
    is done.

    Cool in muffin cups on a wire rack 10 minutes. Remove from
    muffin cups. Serve with remaining sauce.

    Serve over cauliflower rice.

    Makes: 4 servings
