Title: Adelaide Spanish Omelette

2 lg Eggs
1 tb Milk
2 Button mushrooms; diced
1/2 Tomato; diced
1/4 Red capsicum (bell pepper);
- diced
Handful of fresh basil
1/2 ts Smoked paprika
1 c Baby spinach
Whisk the eggs and milk in a bowl and pour over a
non-stick fry-pan on medium heat.
Cook 2 minutes then cover half the egg mixture with
diced vegetables, basil and paprika.
Cook for another minute then fold the other half of the
egg gently over the vegetables to form an omelette.
Serve on baby spinach with cracked pepper.
