Title: Adelaide Central Market Inspired Panzanella

6 c Sourdough bread; in 1"
- cubes
1/4 c Olive oil
1 lg Cucumber; chopped
2 lb Ripe tomatoes; chopped
1 c Red onion; thin sliced
1/2 c Parsley; coarse chopped
1/4 c Mint; chopped
1/2 c Kalamata olives; sliced
1 1/2 tb Capers
1/2 ts Dried basil
1 ts Salt
12 oz Feta; in cubes
MMMMM------------------------VINAIGRETTE-----------------------------
2 tb Lemon juice
4 tb Olive oil
1 ts Lemon zest
Salt & pepper
Set oven @ 425ºF/218ºC
Spread the bread onto a baking pan and drizzle with
olive oil and salt. Toast for about 10 minutes or until
browned.
In a large bowl, mix the remaining ingredients. Add the
bread cubes and toss with the vinaigrette. Season with
salt and pepper.
Serve slightly warm, or allow the salad to sit for about
half an hour for the flavors to blend.
