Title: Chicken Parmesan Meatballs

Yield: 12 Servings
1 lb Chicken sausage; removed
- from casings
3/4 c Italian breadcrumbs
1 c Fresh grated Parmesan
- cheese
1 ts Garlic powder
1/2 ts Onion powder
1 1/2 ts Dried Italian seasoning
1/2 ts Crushed red pepper
2 tb Fresh parsley; chopped
1/2 ts Fresh cracked black pepper
1 lg Egg; lightly beaten
1 c Marinara sauce
1 c Fresh mozzarella; in small
- thin slices
Set oven @ 350ºF/175ºC.
Line a baking sheet with parchment paper.
In a large mixing bowl, combine the first 10 ingredients.
Combine well but don't over mix. Roll chicken mixture into
1" meatballs and place onto baking sheet. Bake for 16-18
minutes until lightly browned.
Spoon about one tablespoon marinara sauce over each
meatball. Place a small thin slice of mozzarella on top
of each meatball.
Return to oven and cook for about 5 minutes or until
cheese is melted.
