Title: Skinny Thai Chicken Meatballs w/Peanut Sauce

Yield: 4 Servings
MMMMM-------------------------MEATBALLS------------------------------
1 lb Ground chicken
4 Green onions; chopped
1/4 c Chopped cilantro
1 tb Fish sauce
1 tb Red curry paste
1 c Breadcrumbs
1 lg Egg
Salt & pepper
MMMMM------------------------PEANUT SAUCE-----------------------------
1 tb Sesame oil
398 ml Can coconut milk
1 tb Red curry paste
2 tb Peanut butter
- salt & pepper
1 tb Brown sugar
pn Chile flakes or more
Set oven @ 375ºF/190ºC.
Place parchment paper over a baking sheet.
In a medium bowl mix all the ingredients for the meatballs
together well. Form the meatballs into small 1 inch balls.
Place meatballs on prepared baking sheet and bake for
about 30 minutes or until done.
In the mean time you can make the sauce. Heat the oil in a
medium sauce pan or skillet. Add the red curry paste and
cook for a couple minutes. Add the remaining ingredients,
stir and cook for about 5 minutes.
Add meatballs to sauce and toss so that the meatballs are
fully coated. Garnish with parsley or cilantro.
Serve with a side of mashed potatoes or rice.
