    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: White Bean Tuna Salad
    Categories: Seafood, Beans, Herbs, Vegetables, Citrus
    Yield: 4 Servings

    15 oz Can cannellini beans, rinsed
    - and drained
    10 oz (2 cans) tuna packed in
    - water; drained
    2 c Light packed arugula or
    - spinach
    1/2 sm Red onion; thin sliced
    1/4 c Fresh flat-leaf Italian
    - parsley; chopped
    1/4 c Red wine vinegar
    3 tb Extra virgin olive oil
    1/2 ts Dried leaf oregano; crushed
    1/4 ts (ea) salt & ground black
    - pepepr
    1/2 Lemon
    Crusty bread; sliced,
    - toasted (opt)

    In a large bowl combine beans, tuna, arugula, red onion,
    and parsley.

    For dressing, in a screw-top jar combine vinegar, oil,
    oregano, salt, and pepper. Shake well to combine.

    Pour dressing over tuna mixture; toss gently to combine.
    Squeeze juice from half of a lemon over salad. Serve with
    toasted crusty bread, if desired.

    Makes: 4 servings
