    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: John's Sweet Potato Soup w/Chilies
    Categories: Potaotes, Soups, Chilies, Dairy, Citrus
    Yield: 4 Servings

    2 tb Butter
    2 ts Cumin seed
    1 lg Onion, minced
    4 cl Garlic; minced
    2 sm Sweet potatoes; peeled,
    - diced
    2 1/2 c Chicken stock or broth
    1/2 c Cream
    Juice of two limes
    1 Chipotle; seeded, minced
    4 oz Can chopped green chilies
    Salt & pepper
    2 tb Chopped cilantro
    Crushed tortilla chips; to
    - serve

    Heat butter in a pot, add cumin seed and toast for one
    minute, stirring often. Add onion and garlic and saut
    until onion is transparent. Add potatoes, stock and cream.
    Cook on medium heat until the potatoes are tender. Add
    lime juice and chilies. Puree with a hand blender until
    smooth. Add salt and pepper, then stir in cilantro.

    Serve with crushed tortilla chips.

    Notes: Could garnish with a dollop of sour cream and a
    lime slice. Can be served chilled but I enjoyed it warm.
    This is a creamy soup and it is essential to use a hand
    blender. I have made this and it is unbelievable that
    something so easy to prepare can taste so wonderful. Ten
    minutes of cooking should result in tender potatoes
    depending on how finely they were diced. If this doesn't
    generate compliments from your dinner guests they don't
    have any taste buds and shouldn't be invited back. I used
    vegetable stock to make a vegetarian version but the cream
    and butter would disqualify this from being vegan.

    This will make 4 generous servings or six smaller servings.
