    Title: Rotini w/Beef & Beans

    Yield: 6 Servings

    1 tb Olive oil
    1 c Chopped onion
    2 cl Garlic; minced
    1 1/4 lb Sirloin steak; in bite-size
    - strips
    1 tb Chilli spice mix
    1 1/2 ts Dried Italian seasoning;
    - crushed
    1/2 ts Black pepper
    14 1/2 oz Can beef broth
    14 1/2 oz Can diced tomatoes;
    - undrained
    8 oz Can tomato sauce
    1/2 ts Salt
    2 c Dried multigrain rotini or
    - fusilli pasta
    15 oz Can red kidney beans; rinsed
    - drained
    10 oz Box whole kernel corn;
    - thawed
    Shredded sharp cheddar
    - cheese
    Snipped fresh parsley (opt)

    In a large skillet heat oil over medium-high heat. Add
    onion; cook 3 minutes, stirring occasionally. Add garlic;
    cook and stir 1 minute. Add the next four ingredients
    (through pepper). Cook 3 to 4 minutes or until meat is
    browned.

    Stir in the next four ingredients (through salt). Bring to
    boiling. Stir in pasta; reduce heat. Simmer, uncovered, 10
    minutes or until pasta is tender, stirring frequently.
    Stir in beans and corn. Simmer, covered, 3 to 4 minutes or
    until heated through. If desired, sprinkle with cheese
    and/or parsley.

    Makes: 6 servings
