    Title: Bacon Egg & Cheese Toast
    Categories: Pork, Cheese, Breads, Dairy, Vegetables
    Yield: 4 Servings

    2 English muffins, split
    2 oz Gruyere or Swiss cheese,
    - shredded (1/2 cup)
    4 sl Thick-cut bacon,
    - crisp-cooked, drained,
    - cut into 1-inch pieces
    4 Hard-cooked eggs, peeled and
    - sliced
    1/2 c Heavy whipping cream
    1 tb Dijon-style mustard
    1/2 ts Cajun seasoning
    1 Green onion; bias-sliced
    Tony Chachere's Cajun
    - seasoning

    Preheat broiler. On a baking sheet arrange muffin halves,
    cut sides up. Top each with cheese, bacon, and eggs.
    Broil 4" from the heat about 2 minutes or until muffins
    are lightly toasted and cheese melts.

    Meanwhile, in a small saucepan whisk together cream,
    mustard and Cajun seasoning. Bring to a simmer over
    medium heat; simmer about 3 minutes more or until
    slightly thickened.

    To serve, spoon cream sauce over each toast and sprinkle
    with green onion. If desired, sprinkle with additional
    Cajun seasoning.

    Makes: 4 servings
