Title: Elias' Squid w/Ouzo, Cheese & Pine Nuts

Yield: 6 Servings
6 md Squid
350 ml Cupful olive oil
350 ml Ouzo
3 tb Grated San Michali cheese *
3 tb Basil; fine chopped *
1 1/2 tb Toasted pine nuts *
Salt & pepper
* For convenience, replace the these ingredients with a
ready-made Genoese pesto.
Clean the squid thoroughly and cut into rings.
Sauté in olive oil and season with salt.
Quench with ouzo, lower the heat and leave to simmer. If
necessary, add water.
Mix the remaining ingredients in the blender with a drop
of olive oil.
Pour into the squid and stir.
If you use ready-made pesto, pour it into the squid.
Leave to cook a little longer and then serve. It goes
without saying - you’ll drink ouzo!
