Title: Chocolate Raisin & Oatmeal Cookie Mix

1 c Rolled oats
3/4 c All-purpose flour
1/2 c Packed brown sugar
1/4 c Granulated sugar
1/2 ts Baking powder
1/8 ts Baking soda
1/4 ts Ground cinnamon
1 c Chocolate-covered raisins
1/2 c Chopped walnuts or pecans
In a clean 1 quart jar or covered container, layer oats,
flour, brown sugar, granulated sugar, baking powder,
baking soda, spice, raisins, and nuts. Seal; store in a
cool, dry place for up to 1 month. Makes enough mix for
about 3 dozen cookies.
TO MAKE CHOCOLATE RAISIN OATMEAL COOKIES: Set oven @
350ºF/175ºC.
Line a cookie sheet with parchment paper or nonstick
foil. In a large mixing bowl, stir together contents of
jar with 1/3 cup softened butter, 2 eggs, and 1/2
teaspoon vanilla until well combined (dough will be
soft). Drop by rounded teaspoons 2" apart on prepared
cookie sheet. Bake in preheated oven for 9 to 11 minutes
or until edges are brown. Cool on cookie sheet for 2
minutes. Transfer to wire racks and let cool.
MAKES: enough mix for about 3 dozen cookies
