MMMMM----- Recipe via Meal-Master (tm) v8.06
Title: Point Samson Rankin Cod

800 g Fresh Western Australia
- Rankin cod
300 g French lentils; boiled
3 Roma tomatoes; in chunks
1/2 Red Onion; thick sliced
1 cl Garlic; sliced
100 ml White Wine
Extra Virgin Olive oIl
1 Lemon; into wedges
Heat a large saucepan to medium high, then add a splash
of olive oil and sauté the onions, cooked for TWO
minutes.
Add the garlic and tomatoes, then cook till the tomatoes
start to soften, approximately TWO minutes.
Add the white wine and cook for another TWO minutes.
Add the Lentils, turn off the heat and mix well with the
tomato mix.
To cook the fish, season well with salt, pepper & olive
oil, then cook for THREE minutes each side (Rankin Cod
is usually a thick fish (approx 3-4cm).
Arrange 4 serving plates and divide the lentil mix
evenly in the centre of the plates.
Place the fish on top of the lentils, and serve with a
lemon wedge.
