Title: Helen's Zucchini Casserole

Yield: 8 Servings
6 Zucchini; thin sliced
1 lg Onion; chopped
1 lg Fresh tomato; chopped
1 cl Garlic; (minced
8 oz Can tomato sauce
2 c Mozzarella; shredded
1 ts Italian spice blend
1 tb Olive oil
1 ts Garlic salt
Heat oil in large skillet. Add zucchini, onion, tomato &
garlic. Cover & cook until desired tenderness, about 10
minutes. Drain.
Stir in tomato sauce & seasonings.
In a 13" x 9" baking dish, place a layer of the zucchini
mixture, then top with shredded cheese.
Continue layers until pan is full, ending with the
remaining cheese.
Bake uncovered, in a 350ºF/175ºC oven, for 25 minutes.
Top with shredded parmesan or Romano cheese, if desired.
