Title: Clare's Frim Fram Sauce
Categories: Condiments, Dips, Chilies, Vegetables
Yield: 1 Cup
2/3 c Dried chile flakes
1 1/2 c Water
1 c Oil
10 cl Garlic; minced
1 1/2 tb Sugar (opt)
1/2 ts Salt
Pour the water over the chile flakes and bring to a boil
over high heat. Reduce to medium and cook until all the
water boils away. Then stir over medium heat until the
chile dries out. (If you like a smoky flavor, continue
stirring over medium heat until they start to darken.)
Remove from heat and add garlic, (optionally sugar), salt,
and oil. Bring to a boil over high heat. Turn off the heat
and let sit for 5 minutes. Then cook over medium heat for
5 minutes more. When thoroughly cool, pour into a jar and
refrigerate. Stir before using.
Poster's notes: I used it to marinate steak and put it on
my mashed potatoes. It would be very good as a dipping
sauce for egg rolls or pot stickers as well. The original
poster declared she uses it on everything but ice cream.
Beware though, while cooking it will clear your sinuses.
