Title: Just The Beginning Chicken

Yield: 3 Servings
2 lg Chicken breast halves;
- chopped
1 md Onion; chopped
1 md Bell pepper; chopped
1 lg Zucchini; sliced
1 tb Extra virgin olive oil
Salt & cracked pepper
Put EVOO in hot pan add S/P w/onion (sweat) till clear
Add S/P w/chicken, brown. Then add S/P w/zucchini Add
bell peppers in the last 5 minute.
Because you're adding S/P though out do not over do it.
Can be served over rice or add four cheese sauce (comes
in a jar) to go over noodles. You can also serve over a
bed of fresh spinach.
Serves: 2 to 4
