    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Parmesan-Crusted Cod w/Garlicky Summer Squash
    Categories: Seafood, Squash, Vegetables, Herbs
    Yield: 4 Servings

    4 (5 oz ea) skinless cod
    - filets
    4 sm Zucchini and/or yellow
    - summer squash; in 3/4"
    - pieces
    2 cl Garlic; minced
    1/4 c Olive oil
    Salt & black pepper
    1/4 c Panko bread crumbs
    1/4 c Grated Parmesan cheese
    2 tb Snipped fresh parsley
    1/8 ts Salt

    In a small bowl combine panko, cheese, parsley, and 1/8
    tsp. salt. Drizzle with remaining 2 Tbsp. oil; toss to
    coat. Sprinkle on top of fish; press lightly. Bake 20
    minutes or until fish flakes easily. If desired, sprinkle
    with additional parsley.

    Thaw fish, if frozen. Set oven to 350+|F/175+|C.

    In a 15" x 10" baking pan combine squash and garlic.
    Drizzle with 2 tbsp. of the oil. Rinse fish; pat dry.
    Place in pan with squash. Sprinkle fish and squash
    lightly with salt and pepper.

    Makes: 4 servings
