    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: St. John Rarebit Toastie
    Categories: Breads, Cheese, Chilies, Beer
    Yield: 4 Servings

    3 tb Knob of butter
    1 tb Flour
    1 tb English mustard powder
    1/2 ts Cayenne pepper
    200 ml Guinness
    Very long splash of
    - Worcestershire sauce
    450 g Mature cheddar; grated
    1 Loaf good white bread

    Melt the butter in a pan, stir in the flour and cook
    until it smells biscuity but is not browning. Add the
    mustard powder and cayenne pepper then stir in the
    Guinness and Worcestershire sauce. Gently melt in the
    cheese. When the mixture is consistent and smooth, remove
    from the heat, pour out into a shallow container, and
    allow to set.

    Meanwhile, toast the bread slices on one side only.

    Spread the rarebit mix 1cm thick onto the toasted side of
    the bread, using your fingers to push it around if you
    find that it is too stiff. Place another slice on top,
    toasted side inwards.

    Heat up your sandwich machine until it is good and hot
    and put your assemblage into its jaws. Eat when
    golden-brown, bubbling and oozing from the centre.
