Going to start a sub project to convert xbit bbs to linux on a dev VM. Any suggestions on what distro? I'm guessing it won't matter but seems like a good first question before I get started.

Not really. I am running slackware and find it works well. Also debian, Sync

I agree with this. I have built and supported SBBS on Ubuntu 16.04 & 20.04 - works great....
I just switched my primary system to Ubuntu 20.04 LTS. Strangely, I'm more happy with it and it works more solidly than my RHEL derivative I was running on.

Does it mean I'm bias if I agree with you Marisa? Being my board runs problem free on your system ;-)

I've been using Ubuntu iin the WSL on Win 10 the last few weeks,
and I've been surprised how well that's worked. It's something to
think of, especially as a dev envirionment. On Win10 HOME, I've
even managed to get a ew Docker images running with various
different envirionments..

Second, I'm not comfortable enough with the Docker process to put
anything *stable* or productionish out there yet. Getting there,
but it's a process.
I think it has incredible potential though.
Also, the schandefreuder boner from MS actually having LINUX
running almost natively is almost too much to bear. Those of us
who were around for the beginnings of this thing of hours, it's
such fun...
